Rose Deneen, a culinary arts instructor at Moraine Valley Community College is a finalist in the 2019 Midwest Independent Publishing Association’s 29th annual Book Awards. The awards recognize quality in independent publishing in the 12-state Midwest region.
Rose Deneen, assistant professor, received the award for her first book, “Baking with Vegetables,” a compilation of classic and original recipes.
“Roughly 30 of the 51 recipes are brand new that I developed,” she said. “I thought about what I could do with beets, cauliflower and so on and created them as I went along.”
A second cookbook for those who need a gluten-free diet, is underway, and Deneen is contemplating a vegan cookbook, as well.
“I’m very proud of this accomplishment,” she said. “It’s never been on my radar to write a book. I blended my marketing background with my baking experience, and it all came together. It was a lot of hard work, but very rewarding.”
Deneen oversees the college’s Baking and Pastry Program, teaching hands-on classes on basic baking principles and pastry preparation for cakes, breads, cookies, frozen desserts and other baked goods, along with menu planning, cost controls, marketing, nutrition, sanitation, and food preparation and production.
